Vegetable Strudel
Ingredients:
- 1 small onion
- 2 grated carrots
- 2 celery sticks finely chopped
- 1 cup of mushrooms finely chopped
- filo pastry
- ready made Hollandaise sauce
- 1 cup baby potatoes
- 1 handful fresh green leaves such as lettuce or cress
- 1 T olive oil
- soy sauce
Cooking method:
- Saute the onion in a little oil.
- Add the carrot and then the celery.
- Finally add the mushrooms and about 1T soy sauce.
- When the veggies are cooked remove from heat.
- Roll out two sheets of filo pastry and place half the vegetables in the middle of each piece of pastry.
- Fold up the pastry as if you were folding a blanket or a towel.
- Bake at 180'C for 30 mins.
- Meanwhile boil the baby potatoes for 15 to 20 mins or until cooked.
- Warm the Hollandaise sauce.
- Place each filo parcel on a plate with half the potatoes and half the salad.
- Pour Hollandaise sauce over the strudel and the potatoes.
- Serve salad with a French salad dressing.
Note
- You can add Parmesan cheese to the mixture.
- Vegetarian Haggis could be used as a quick and easy alternative to the filling.
- You could make a sweet version by using fruit such as apples, raisins and cinnamon.
