Tofu, butternut and red cabbage stir fry
Serves 4
Ingredients
- 1 block smoked tofu diced into 1.5 cm cubes
- 1 medium butternut squash - peeled and cubed into 1 to 1.5 cm blocks
- 1 small/medium red cabbage - shredded into thin strips
- 1 onion - finely chopped
- 2 cloves garlic - finely chopped
- Canola oil
- Soy sauce
- Sherry
- Black Pepper
- Sea salt
- Handful fresh coriander
Cooking Method
- Steam or microwave the butternut cubes until just starting to get slightly soft
- Mix about 1/4 cup soy sauce, 1/4 cup sherry, some black pepper and a dash of water in a bowl
- Heat the oil in a wok
- Add the chopped onion and cook for a few minutes until soft
- Add the garlic and cook a few minutes more
- Add the butternut cubes and stir fry, turning frequently with a large spatula
- Pour in about half the soy/sherry mixture and continue stir frying
- Add the cabbage, and when it is wilted down
- Add the tofu cubes
- Continue stir frying, adding more of the soy/sherry mixture as it cooks away
- You want the veg to be cooked but not too soft and turned to a stew!
- When cooked but al dente, stir in some ground sea salt and black pepper and the fresh coriander
- Serve right away
