Three Bean Patties
Makes 8
Ingredients:
- 1 Cup rolled oats
- 1 Tin (400 grm) kidney beans
- 1 Tin (400 grms) lentils
- 1 Cup cooked edamami beans
- 1 Cup chopped nuts - (walnuts, pecans or your choice)
- 1 large onion chopped
- 3 Cloves garlic
- 3 Tablespoons tahini paste
- 1 cup parsly - chopped
- Sea salt and fresh ground black pepper - to taste
Cooking method:
- Finely grind the oats in a coffee or spice grinder
- Add together the ground oats, lentils, kdney beans, edamami beans, nuts, onion and garlic
- Place this mixture in a food processor and mix well
- Add the tahini, parsley and salt and pepper to taste
- Pulse until well combined
- Make thi mixture into 8 patties (using wax paper). It sticks to your hands like crazy!
- Place them on a plate and chill for about 30 mins in the refrigerator
- Lay them on a baking tray and bake at 350 deg F for about 40 mins until heated through and browned
- Serve with a salad, as in the picture, or with a sauce of your choice
