Three Bean Patties

Three Bean Patties

Makes 8

Ingredients:

  • 1 Cup rolled oats
  • 1 Tin (400 grm) kidney beans
  • 1 Tin (400 grms) lentils
  • 1 Cup cooked edamami beans
  • 1 Cup chopped nuts - (walnuts, pecans or your choice)
  • 1 large onion chopped
  • 3 Cloves garlic
  • 3 Tablespoons tahini paste
  • 1 cup parsly - chopped
  • Sea salt and fresh ground black pepper - to taste

Cooking method:

  1. Finely grind the oats in a coffee or spice grinder
  2. Add together the ground oats, lentils, kdney beans, edamami beans, nuts, onion and garlic
  3. Place this mixture in a food processor and mix well
  4. Add the tahini, parsley and salt and pepper to taste
  5. Pulse until well combined
  6. Make thi mixture into 8 patties (using wax paper). It sticks to your hands like crazy!
  7. Place them on a plate and chill for about 30 mins in the refrigerator
  8. Lay them on a baking tray and bake at 350 deg F for about 40 mins until heated through and browned
  9. Serve with a salad, as in the picture, or with a sauce of your choice
