Meat Free Everyday - Recipes
Riccota Rissoles
Serves 4 (makes about 12 rissoles)
Ingredients:
- 600 grams ricotta cheese
- zest of 1 lemon
- 2 red or green chillies, deseeded and finely choppped
- 3 tablespoons chopped fresh oreganum leaves
- large cup grated parmesan cheese
- sea salt and fresh ground black pepper
- 2 eggs, beaten
- 100 mls oat flour
Cooking method:
- Crumble the ricotta into a large bowl
- Mix in the lemon zest, chopped chillis and oreganum leaves
- Fold in the grated parmesan
- Season with sea salt and black pepper
- Add in the beaten aggs and oat flour to bind the mixture
- Shape into rissoles
- Bake on a baking tray at 200 dec C for about 30 mins, tirning once, until cooked through and browned
- Serve hot with vegetables, or cold with salads (as in the picture)
