Red Cabbage with Mustard - Lal Kobichi Bhaji
Serves 4
Ingredients:
- 2 tablespoons sunflower oil
- 1 teaspoon black mustard seeds
- 1/2 teaspoon cumin seeds
- large pinch asafoetida
- 2 green chillies, slit down middle, seeds removed and stalk left intact
- 300g red cabbage, finely chopped
- salt to taste
- 1 tablespoon lemon juice
- 3 tablespoons desiccated coconut
Cooking method:
- Heat the oil in a heavy-based saucepan over a high heat and add the mudtard seeds. As they pop, add the cumin seeds and asafoetida, and stir in the chillies.
- Add the red cabbage and salt. Pour in 3-4 tablespoons of water and bring to boil. Reduce heat, cover and cook for about 10 minutes until the cabbage is tender
- Remove from heat and stir in the lemon juice and coconut
