Oatcakes
Makes about 10 (see picture)
Ingredients:
- 225 grms rolled oats - ground to a flour
- pinch of salt
- 35 grms butter - softened
- cold water
Cooking method:
- Put the flour in a large mixing bowl
- Add the salt
- Mix in the butter well, working it through with your fingers
- Add just enough cold water, bit by bit, till you have a workable dough
- Roll the dough out on a floured board, using a sheet of wax paper if necessary, to the right thickness - about 2 - 3 mm
- Using cookie cutters, cut into the shape or design of your choice
- Place on a greased baking tray
- Bake at 180 dgerees C for about 30 minutes
- When done, place on a rack to cool
Some tips:
- When rolling out, dont fuss about making the edges neat - when it is thin enough in the middle for about 5 cookies, cut these
- Then reroll out the remaining dough and cut about three more, and so on
- For the last one, I just pressed the dough into the cookie shape by hand
Variations:
- You can make your oatcakes sweeter by adding finely chopped nuts, seeds, dried fruit, cinnamon and/or nutmeg to suit your taste
- Be careful not to put too much additional stuff, or too big pieces in. This will make it harder for the dough to stay in shape
- You can also make them more savoury by adding different spices to the basic recipe
