Mutter Paneer - Peas with Cottage Cheese
Serves 4
Ingredients:
- 2 medium onions roughly chopped
- 2 tablespoons sunflower oil
- 2 teaspoons ginger-garlic paste
- 2 tablespoons tomato paste
- salt to taste
- 1/2 teaspoon chilli powder
- 1 teaspoon turmeric powder
- 1 teaspoon ground cumin
- 300g frozen peas
- 150g paneer cut into 2.5cm cubes
Cooking method:
- Place onions in a small saucepan, just covered with water. Bring to boil, reduce heat and simmer until soft and translucent. Transfer along with the cooking liquid to a blender and blitz to a smooth paste.
- Heat the oil in a heavy-based saucepan and fry the ginger-garlic paste for 1 minute over a high heat.
- Spoon in the onion paste from the blender and cook for 2 - 3 minutes, stirring. Add the tomato puree, salt and spices.
- Add the peas and about 100ml boiling water. Bring to the boil, reduce heat and simmer for 5 minutes.
- Scatter the paneer cubes over the top and simmer for 1 minute to soften them.
The recipe is from "healthy Indian in minutes" by Monish Bharadwaj
This is a great book and you can buy it here:
Notes:
- Paneer should be available for your local Indian grocer or spice shop.
- Instead of ginger-garlic paste, I used fresh garlic and ginger very finely chopped.
- I prefer to stir the paneer cubes into the mix and cook a little longer so that they can soak up the flavour. Paneer is a good source of protein but is somewhat bland.
