Low Carb Soda Bread
Ingredients:
- 1 cup almond meal
- 1 cup gluten flour
- 1 cup whole wheat flour
- 1 cup soya flour
- 1 heaped teaspoon Baking Powder
- 1 - 1 1/2 cups fat free yogurt
- Pumpkin seeds
Cooking method:
- Add the dry ingredients to a clean dry bowl and together. Make sure they are well mixed.
- Add 1 cup yogurt and mix in with a spoon or spatula. If the dough comes together in a ball then no need to add more yogurt. If the mixture is still dry, keep adding yogurt little bit by bit until it binds together in a heavy dough.
- Place the dough in a silicone baking container and press down to fill corners.
- Heat the oven to 220'C. Only when the oven is heated, place the bread in the oven.
- Cook for a full 45 mins.
- Remove bread from heat and allow to cool.
Notes and variations
- First trick is to make sure the dry ingredients are thoroughly mixed. Gluten flour can turn blobby if not well mixed in
- Second, bake at full temp for the full time. Its a dense bread that must be baked through to the core
- Vary the seeds that you add to dry mixture. Think flax seeds, pumpkin seeds (as in this version) or sunflower seeds.
- Sprinkle seeds on top of bread. Think sesame seeds, poppy seeds or caraway seeds.
- Add stevia and spices such as cinnamon or cardamom to make a sweet version of this bread.
- Mix in grated cheese or herbs such as oregano to make a savoury bread.
