Cauliflower Rice
4 Servings
Ingredients:
- 1 medium sized cauliflower
- 1 large onion
- 2 cloves garlic
- Olive oil
- Fresh ground black pepper
- 3 or 4 eggs (for an egg-fried rice option)
Preparation:
- Put the cauliflower florets in a food processor and run for about 45 seconds till a rice-like texture
- Finely chop the onion and garlic
- Beat the eggs in a bowl (if making egg-fried rice)
Cooking:
- Heat the oil in a large frying pan
- Fry the onion and garlic lightly till softened, but not browned
- Stir in the cauliflower and heat through well, stir-frying continually. Only about 5 minutes
- Season with a little salt and fresh ground black pepper
- For the egg-fried rice option, now stir in the beaten eggs and stir-fry for a minute or so more
- Serve as an accompaniment to curries, stews or stir-fries
