Gajar ka Salaad - Carrot and Cashew Salad with Honey
Serves 4
Ingredients:
- 1 teaspoon sunflower oil
- 1/2 teaspoon black mustard seeds
- 1/4 teaspoon cumin seeds
- 4 large carrots, washed and grated
- 2 tablespoons unsalted cashew nuts
- salt to taste
- small handful fresh coriander leaves, washed
- 1 teaspoon runny honey
Cooking method:
- Heat the oil in a small saucepan over medium heat. Add the mustard seeds and allow them to pop. Stir in the cumin seeds and turn off the heat.
- Combine the grated carrots and cashew nuts in a serving bowl. Drizzle the hot oil and seeds over abd mix well.
- Season to taste with the salt.
- Stir in the fresh coriander and honey.
