Low Carb Cardamom Butter Cookies

Low Carb Cardamom Butter Cookies

Ingredients:

  • 190g low carb flour mix (see note below)
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 10 Tablespoons soft unsalted butter
  • 115g granular sugar (Splenda)
  • 1 large egg
  • 1 Tablespoon water
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cardamom

Cooking method:

  1. Cream the butter and granular sugar in a large bowl until light and fluffy.
  2. Mix the dry ingredients together in another bowl.
  3. Add the egg, water and vanilla to the butter/sugar mixture.
  4. Mix in the dry ingredients to the butter/sugar mixture.
  5. Shape the dough into little balls and place on a baking sheet cover with baking parchment.
  6. Press the balls with a fork and place choc chips on each cookie.
  7. Bake at 180'C for 10 to 15 minutes.

Note - for low carb baking mix:

  • 1/4 Soy flour
  • 1/4 Gluten flour
  • 1/4 coconut powder
  • 1/4 wholewheat flour
