Andhra Carrot Curry
Serves 4
Ingredients:
- 8 to 9 medium carrots - washed and sliced into small roundels
- 2 tablespoons canola or grapeseed oil
- 1 onion - sliced
- 3 cloves garlic - finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1 teaspoon chilli powder
- 1 teaspoon turmeric
- salt to taste
Cooking method:
- Heat the oil in a saucepan and saute the garlic for about 15 to 20 seconds
- Add the cumin seeds and mustard seed and continue to saute until the mustard seeds start to pop
- Add the onions and continue to saute for about 5 minutes
- Add the carrots, salt, chilli powder, turmeric - stir well and cook over a low heat for about 10 minutes till the carrots are soft
Notes:
- This is our version of a similar recipe I found on the web, but it had far too many ingredients and was far too complicated
- Serve this dish as a vegetable accompaniment to any meal
