Pear, almond and chocolate crumble

Pear, almond and chocolate crumble

Serves 6

Ingredients:

  • 900 grms pears, cored and chopped into about 2cm cubes
  • 2 tbsp caster sugar
  • 75 gms almond flour
  • 1 tbsp ground cinnamon
  • 75 gms diced almonds
  • 65 gms butter, chilled and diced
  • 75 gms dark chocolate, roughly chopped
  • 75 gms brown sugar

Cooking method:

  1. Preheat oven to 180 C or equivalent
  2. Add pears and caster sugar to a 2 litre pie dish, stir and bake for about 10 to 15 mins until pears have softened, then set aside
  3. Add the almond flour, cinnamon, ground almonds and butter togehter in a large bowl and work with fingertips till it resembles coarse breadcrumbs
  4. Add in the chocolate and brown sugar and mix together
  5. Sprinkle this crumble mixture over the cooled pears
  6. Bake for about 40 minutes or until browned on top
  7. Serve with cream, icecream or Greek yoghurt

Notes:

  • Alternative sweetener - to avoid using sugars, replace with Stevia:
  • Approx 10 mls liquid stevia in lieu of the caster sugar
  • Reduce the brown sugar to about 30 gms and add 5 mls stevia powder
