Low Carb Soda Bread

Low Carb Soda Bread

Ingredients:

  • 1 cup almond meal
  • 1 cup gluten flour
  • 1 cup whole wheat flour
  • 1 cup soya flour
  • 1 heaped teaspoon Baking Powder
  • 1 - 1 1/2 cups fat free yogurt
  • Pumpkin seeds

Cooking method:

  1. Add the dry ingredients to a clean dry bowl and together. Make sure they are well mixed.
  2. Add 1 cup yogurt and mix in with a spoon or spatula. If the dough comes together in a ball then no need to add more yogurt. If the mixture is still dry, keep adding yogurt little bit by bit until it binds together in a heavy dough.
  3. Place the dough in a silicone baking container and press down to fill corners.
  4. Heat the oven to 220'C. Only when the oven is heated, place the bread in the oven.
  5. Cook for a full 45 mins.
  6. Remove bread from heat and allow to cool.

Notes and variations

  1. First trick is to make sure the dry ingredients are thoroughly mixed. Gluten flour can turn blobby if not well mixed in
  2. Second, bake at full temp for the full time. Its a dense bread that must be baked through to the core
  3. Vary the seeds that you add to dry mixture. Think flax seeds, pumpkin seeds (as in this version) or sunflower seeds.
  4. Sprinkle seeds on top of bread. Think sesame seeds, poppy seeds or caraway seeds.
  5. Add stevia and spices such as cinnamon or cardamom to make a sweet version of this bread.
  6. Mix in grated cheese or herbs such as oregano to make a savoury bread.
