Low Carb Oatcakes

Ingredients:

  • 4 Cups oat bran
  • 1/2 Cup soy flour
  • 1/2 Cup gluten flour
  • 1/2 teaspoon baking powder
  • 1/4 Cup butter at room temperature
  • 1 Cup water

Cooking method:

  1. Add the dry ingredients to a bowl and mix well.
  2. Add the butter and rub between your fingers until it is well mixed and the mixture looks like fine bread crumbs.
  3. Add the water slowly until the mixture comes together.
  4. Roll out and cut into shapes.
  5. Line a baking tray with baking parchment and place oatcakes on the tray.
  6. Bake at 180'C until golden for around 25 minutes.
