Chilled Pea Soup

Chilled Pea Soup

Ingredients:

  • 1 large onion - chopped
  • sunflower oil
  • 5 ml garam masala
  • 750 ml vegetable stock (homemade or store bought)
  • 500 grams frozen peas
  • block of silken tofu
  • salt and fresh ground black pepper to taste

Method:

  1. Cook the onion in oil until it is soft but not browned.
  2. Add garam masala, and cook for a few minutes to release the flavours.
  3. Add the stock and peas,
  4. Cook until peas are tender.
  5. Remove from heat and let it stand till cool.
  6. Add your block of tofu and blitz with a stick blender till smooth and creamy.
  7. Season to taste with the salt and black pepper.

Notes

  1. The original recipe did not include the tofu, but this gives it that extra creamy texture.
  2. It is always best to cool the liquid before adding tofu, otherwise the tofu can 'split', which doesn't make it look appetizing.
  3. Serve with croutons, a swirl of cream or yoghurt, or whatever takes your fancy.
