I much prefer making my own pastry, and this vegan short crust pastry is easy – and the recipe works. I found it here. Thanks to Veganlovlie. Check out their blog and website.
I have just used this recipe to make a quiche.
Ingredients:
- 2 ¼ C flour (I used wholewheat flour – nice nutty flavour)
- ¾ t baking powder
- ¼ t salt
- 6 + T sunflower oil
- 6 T aquafaba or mix 5 ½ T plant milk with 1 t lemon juice
Method:
- Mix flour, baking powder and salt in a bowl.
- Add in oil – mix till like breadcrumbs.
- Add the aquafaba or the plantmilk mix.
- Mix to form non-sticky dough. (If necessary add a touch of COLD water)
- Roll into a ball and let rest for at least 15 mins.
- Roll out on floured board and press into mini tart tins.
- Prick holes in base.
- Bake at 350 F/190 C for 20 mins.
