A while ago one of the UK fast food chains (Greggs) came up with a Vegan Steak Bake.
I thought I would try making my version.
I cheated a bit and used a bought puff pastry.
For the filling I simply sauted some finely chopped onion and garlic, added some TVP (Textured Vegetable Protein) along with salt, pepper, tomato paste, a dash of vegan beef stock, a spoon of marmite and sort of stir fried the mixture till cooked down and not too wet.
You could add all sorts of other flavours – soy sauce or even a dash of liquid smoke.
Or use this “mince” from my Vegetarian Lasagne Recipe I posted a while ago. (NOTE – in those days I was not 100% vegan – so in that recipe the mince is vegan but the rest is only vegetarian.)
Or use your own favourite vegan cottage pie filling.
Set aside to cool.
Roll out a square of pastry. Mentally divide it into three, and spoon some of the mixture into the centre section.
Cut the 2 side sections into strips and plait them back over the centre section.
Preheat your oven to about 220 C.
Brush the top with soy milk, and bake for about 25 to 30 mins till browned.
Serve up with whatever sides you like.
