I just love this Chocolate Salami – thanks to Sophie and Paul from Veganonboard. I normally like to make e recipe a couple of times before I post it but this one was relatively easy and worked perfectly first time.
This is my version – main difference is I have not dusted the final product with icing sugar.
Ingredients:
- 200 grms dark chocolate
- 1/4 C plant based milk (I used soy)
- 2 T olive oil
- 1/2 C chopped mixed nuts and dried fruit
- 1 C crumbled biscuits (about 7 biscuits)
What to do:
1 Prepare your ingredients –
- Coarse chop the chocolate
- Crumble the biscuits – not too fine
- Chop the nuts and dried fruit
2 Melt the chocolate –
The key here is not to melt it too quickly or it will split.
Put the chocolate pieces in a bowl over some gently steaming water.
Once most of the outer chocolate has melted, gently stir to melt the rest.
Once all the chocolate is melted, slowly add in first the olive oil, and then the soy milk. Stir gently.
Once olive oil and soy milk fully mixed in, stir in the crumbled biscuits and the nut and dried fruit mix.
Remove from the heat, and allow to cool.
Take a piece of baking parchment, and spoon the cool mixture into it.
Then form it and roll it into a sausage shape.
Roll tightly and put in fridge to set.
Once set, slice as you want.
