Panna Cotta is an Italian dessert usually made with cream. The name means cooked cream.
I made this vegan version using sago pearls. A very easy recipe.
Ingredients:
- 100 grms sago pearls
- 1 1/2 Cups soaking liquid – (50/50 plant milk and water)
- 1/2 C plant milk
- 1/3 C sugar (I used 50/50 sugar and erythretol)
- 1/2 t vanilla essence
What to do:
1 – Soak the sago in the liquid for about 20 to 30 minutes.
2 – Add the sago along with the soaking liquid and the other 1/2 C plant milk to a pot.
3 – Bring to boil. Then simmer very gently for about 20 mins till the sago is soft and translucent. Stir frequently to prevent burning.
4 – Remove from heat and stir in the sugar and vanilla.
5 – Let cool a little. Then pour into silicon moulds. This recipe made 7 of the size in the pics.
6 – Allow to cool and then refrigerate till they firm up.
7 – Turn out of the moulds.
Notes and Options:
1 – You could put cinnamon sticks in the soaking liquid for added flavour.
2 – My serving pic shows just fruit, but you could make a berry couli and pour that over.
3 – You can eat it as a warm pudding instead of setting in moulds.
4 – You could also finish off by baking for a short while.
