Been trying for a while to make good sweetcorn fritters. The ones you get at restaurants are great, but they are deep fried. And deep frying is something we try to avoid.
Found this recipe on Domestic Gothess and it is great!
Lovely served with a sweet chilli sauce.
Ingredients:
- 1 T flaxseeds
- 3 T water
- 1 C AP flour
- ½ C cornstarch
- 1 T baking powder
- 1 T brown sugar
- 1 t salt
- ½ t garlic powder
- 1 t cumin powder
- ½ t smoked paprika
- 4 T nutritional yeast
- 1 C soy milk
- 1 T olive oil
- Handful finely chopped chives and spring onions
- 450 grams corn kernels
What to do:
1 – Mix the flaxseed and water (ie a flax egg) and set aside.
2 – Mix all dry ingredients together well (flour, cornstarch, baking powder, brown sugar, salt, garlic powder, cumin, coriander, smoked paprika and nooch) suggest sifting a couple of times to ensure well mixed.
3 – Mix wet ingredients together (soy milk and oil)
4 – Add the flax mix to the soy milk/oil mix. I used stick blender to mix thoroughly.
5 – Add this mix to the dry mix. Mix well with a spatula.
6 – Add the chopped chives, onions and corn and mix well. You might need to add in a dash of soy milk if too dry and sticky.
7 – Heat a little oil in a non-stick frying pan. Take scoops of the mix and shallow fry for a few minutes on each side. (about a large dessert spoon – see pics)
When done remove and place on paper towel to remove excess oil.
